I am an French/Irish citizen, born in Paris, recently returned to Ireland after several years furthering my restaurant management skills in some of the most diverse and demanding cities around the globe
For almost six years I have also been privileged to hold management positions in some of the most highly respected restaurants and wine bars in Dublin – including Peploe’s on St Stephen’s Green and Ely CHQ. My particular expertise is working with owner/proprietors to either establish a new business in this very competitive market place or revitalise an existing restaurant or wine bar business by managing the recruitment and training of staff, developing novle wine lists, establishing contracts with wine merchants, developing work schedules and providing input to the PR and Marketing plan for the business.
